Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts

  • 2 teaspoons ginger minced
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 1/2 cup low sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame seeds
  • 2 tablespoons sliced green onions

Instructions

  1. Place the chicken breasts in your slow cooker. No need to chop or brown, just add them in whole.
  2. In a small bowl, whisk together the garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar. Pour the mixture over the chicken.
  3. Cover and cook on HIGH for 3 hours or LOW for 5 to 6 hours. The chicken should be cooked through and easy to shred.
  4. Take the chicken out of the slow cooker and shred it with two forks.
  5. Strain the sauce left in the slow cooker into a small saucepan. Place it on the stove over medium high heat and bring to a simmer.
  6. In a separate bowl, mix the cold water and cornstarch until smooth. Stir it into the simmering sauce and cook for 1 to 2 minutes until the sauce thickens slightly.
  7. Pour the thickened sauce over the shredded chicken and stir to coat. Top with sesame seeds and green onions before serving.
