If you’re looking for an easy dinner that feels like comfort in a bowl, this Slow Cooker Creamy Tuscan Chicken Orzo is it. Just toss everything in the slow cooker and let it do the work. You’ll come home to tender chicken, creamy orzo, and rich, savory flavors with just the right touch of garlic, spinach, and Parmesan.
Yield: 4 servings
Total time: 3.5 hours (including prep and cooking)
Ingredients
- 2 boneless, skinless chicken breasts, cut into small cubes (or use chicken thighs)
- 1 teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (add more or less to taste)
- Salt and pepper
- 4 cloves garlic, minced (or 1 teaspoon garlic powder)
- 1 small onion, diced (any type works)
- 1 cup sun-dried tomatoes, chopped (drain if using the kind packed in oil)
- ½ cup low-sodium chicken broth (or veggie broth)
- 1 cup heavy cream (or use half-and-half or plant-based cream)
- 1 cup fresh spinach, chopped
- 1 cup orzo pasta (or small pasta like ditalini, or even rice)
- 1 cup grated Parmesan cheese (or swap with Asiago or Pecorino Romano)
You’ll need: A slow cooker
Instructions
- Season the chicken
Put the chicken pieces in the slow cooker. Sprinkle with Italian seasoning, red pepper flakes, salt, and pepper. - Add the flavor
Add garlic, onion, and sun-dried tomatoes right on top. - Pour in the broth and cook
Pour the broth over everything. Cover and cook on low for 2–3 hours or high for 1–1.5 hours until the chicken is almost done. - Stir in cream and orzo
Add the heavy cream and orzo. Stir it in, then cook for another 20–30 minutes on low, just until the orzo is tender. Check it after 10 minutes so it doesn’t overcook. - Add spinach and cheese
Stir in the chopped spinach and Parmesan cheese. Let it sit for a couple of minutes until the spinach wilts and the cheese melts into the sauce. - Serve and enjoy
Taste and add more salt or pepper if needed. Serve warm. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
Tips
Brown the chicken first in a skillet for more flavor.
Use fresh spinach for better texture.
Grate your own cheese – it melts smoother than pre-grated.
Watch the orzo, it cooks fast!
